This tiny version of Rustichella d'Abruzzo's famous artisan Panettone makes an ideal stocking filler – or a treat to be shared between two. It's crafted from natural sourdough (what we call pasta madre or 'mother dough') to develop its pillow-soft but satisfyingly chewy texture. The light and airy dough is studded with plump, juicy raisins and zingy bright strands of candied peel. You can enliven the delicate perfume of the bread by gently warming it in the oven for a few minutes, reigniting its just-baked joy. The panettoncino comes packed in a pretty tin with a charming chequered design, making it a very covetous gift.
